Peter Gilmore, an Australian chef and restaurateur, is renowned for his innovative Australian cuisine and significant impact on the fine dining scene. As the executive chef at Quay, a Sydney-based restaurant consistently ranked among the world’s top 50, Gilmore has earned numerous accolades, including The Sydney Morning Herald Good Food Guide’s Chef of the Year award. He also serves as the executive chef at Bennelong and has authored two cookbooks, “Quay: Food Inspired by Nature” and “Organum.” Gilmore has appeared as a judge on MasterChef Australia and contributed to the development of the Noma pop-up restaurant in Sydney. Interestingly, he left school at 14 to chase his dream of becoming an actor.
